Don't waste your time if you happen to get a bad bag of yeast. Even though I am very frugal, it only took me a few minutes this morning to realize the yeast was not good, and I tossed it. Because I had more yeast on hand, I had hot, homemade bread in a couple of hours. I will put future purchases of yeast in my freezer for longer shelf life. I make whole wheat bread weekly and like to have a couple of years' supply of all my ingredients on hand.
